Dhiraj Dargan
Brand Chef – Comorin
Chef Dhiraj Dargan helms the culinary vision at Comorin, driving all new openings. An IHM Pusa graduate, he began his journey with Old World Hospitality in 2003 and rose to Executive Sous Chef at Indian Accent. With deep experience in Indian and global cuisines, he’s now focused on reimagining Indian comfort food and uncovering lesser-known regional pairings at Comorin.
Varun Sharma
Head of Bars – EHV International
Varun Sharma, with 18+ years in the beverage industry, leads the beverage program across Indian Accent, Comorin, Hosa, and Fireback. Widely awarded, he has been named Mixologist of the Year multiple times, and under his leadership, Comorin has been recognised as India’s Best Restaurant Bar for four consecutive years by 30 Best Bars India.
Kevin Rogrigues
Head of Wines – EHV International
Kevin brings deep expertise and an enduring passion for wine to every glass. Crowned Best Sommelier at the inaugural India competition in 2024, he currently serves as Head of Wines at EHV International, where he has shaped the award-winning wine programs at Indian Accent in both New Delhi and Mumbai, each earning Wine Spectator Awards for two consecutive years. A respected judge on the panels of the India Wine Awards and the India ProWine Awards, Kevin now brings his signature flair and curatorial finesse to Comorin.
